After coming up through the ranks with FC Strahlungen and TSV Großbardorf, the towering forward joined FC Carl Zeiss Jena in 2013. He made his first steps in professional football while with Jena, getting promoted to 3. Liga in 2017. A year later, Dietz joined SV Werder Bremen II and then, after a season with Bremen, made the move to SpVgg Unterhaching.
FC signed Dietz on loan in 2020 for the under-21s before signing him on a permanent deal one year later. At the end of May 2022, he signed a first-team deal at FC and made his Bundesliga debut at the beginning of the 2022-23 Bundesliga campaign against FC Schalke 04.
